Random cravings, for some reason I was really craving black olives, ya know like the cheap ones that come in a can that you used to put on your fingers when you we’re a kid (unless that was just me & my sister?) Anyway at least I found some certified GMO free ones at my neighborhood market. 
Whipped myself up this little hors de’oeuvre plate for dinner last night. Made a spread/dip from random things I already had; leftover steamed chard, frozen peas, sundried tomatoes, green onion, put them in my blender with just a bit of hot water, olive oil, Himalayan salt & garlic powder. Super delicious, especially with an olive on top!
Lesson for today, you can really easily turn just about anything into a tasty dip! Honest. .

This is a perfect post-workout meal, as you get a a solid hit of both protein and carbs. Carbs post workout help spike insulin and transport the protein to the muscles to get synthesised. So tasty with the pesto and goats cheese! Personally, I’ve made the choice to eliminate most gluten and cow diary from my diet, as both have an effect on me and are renowned for being quite damaging to the gut over time. Sourdough is fermented (40 hour is better) using a certain bacteria and yeast, as opposed to gluten rich bakers yeast. This breaks down and dramatically reduces the gluten toxicity in flour. Goats do not contain a certain mutation in the milk that most cows do, making their milk and cheese much more digestion friendly. Reduce 380 calories by dropping to two eggs and one piece of sourdough.

CURRIED CAULIFLOWER & GARLIC (w/ chicken) - Easy to make this recipe without chicken for an equally satisfying meal.... Chop up half a head of a large cauliflower into florettes. Mince a generous portion of garlic (I minced four cloves). Warm cast-iron skillet on medium heat with 1 Tbl.  coconut oil and add cauliflower and garlic. Allow to cook until garlic is soft and very aromatic, about 5 minutes. Add 1 Tbl. yellow curry powder and 1 tsp. salt. Stir consistently and add a little more coconut oil if it begins to stick to the skillet. Cook for about 10 minutes on medium-low. Cut up one chicken breast and add to one side of the skillet, allowing to cook for a few minutes before you mix it in with the rest. Once everything is mixed well together, allow to cook for about 5 minutes then add 1 Tbl.  coconut aminos. Cover and allow  to cook on low until cauliflower is soft enough to eat and chicken is cooked through, but still tender. Add salt to taste and garnish with fresh parsley. Serves about 3. Total cost about $5.

For me it can be a make or break situation...last night I made chicken patties, with a fresh salad and...waited for the steamed sweet potatoe to soften, by time it was done I had finished half my plate! Agh!!!

While I don’t prep 12 individual meals, I like to keep; ✅ Steamed/Baked Sweet potato.
✅Quinoa (although quick to make, I don’t like to take chances).
✅ Salad ingredients (great if they are already washed and chopped...but that doesn’t happen very often)
✅Boiled eggs
✅Homemade dressings: pesto, hummus and avocado oil ranch.
✅ Easy to cook protein. .

My first attempt at fermenting vegetables!  I wish, oh how I wish, it was successful.  When all was said and done, it made me gag, gave me nightmares!  With all the kimchi I eat, I thought it would be pretty cool to try my hand and teach myself how to ferment vegetables.  For now, I think I'll stick to buying my favorite brand at Heinen's or taking one of @tamaramannelly classes.  My fermented carrots may have been just awful, but they looked really pretty in the jar!

It is how you move.

It is how you eat.

It is how you handle your emotions.

These are things that may not seem as important, but believe me, they are.
