Oversleeping on a Monday and skipping my morning workout? Check!
Obvs not the ideal way to start my week, but there used to be time where the above scenario would have left me panicked to the next level. Today, however, I shrugged it off and actually couldn't care less. Not because I don't value my health and well-being anymore, but because I have learned that my health and well-being doesn't depend on my workouts and healthy eating alone.
I needed the rest and I needed to aknowledge that. My mental health is JUST as important as my physical health and giving my mind and body a break doesn't mean I am neglecting it. It means that I am restoring balance, adapting to the eb and flow of life's unexpectedness and letting go of unachievable rules of perfection. | Buckwheat waffle, yoghurt, berries + a chai bliss ball
I don't think I'll ever eat chia pudding any other way, EVER again!!!! And, this could not be easier to make.
Chia Pudding with Berry Compote
To make chia pudding (the night before):
In a jar or bowl, combine:
1 cup full fat coconut milk
1/4 cup chia seeds
1 tsp vanilla
1 tsp maple syrup
Mix well, seal jar let sit in fridge over night.
To make compote:
Combine in a small saucepan:
1 cup berries (I used frozen blueberries )
1/2 teaspoon vanilla
1 tablespoon maple syrup
Bring to a boil, then reduce heat and simmer for a few minutes. The berries will release juice and you can muddle them with a spoon a bit to crush the berries if you want.
In the morning, top the chia pudding with as much compote as you like (save the rest for something else!). Then add whatever other toppings you like. I did almonds and coconut flakes. So yummy 👍PS- If you want to completely omit the maple syrup from both to make it sugar free, it will still be delicious!.

Good morning!! Today I had what I eat basically every day for breakfast in fall/winter: oatmeal!! I had 1/4 c @bobsredmill steel cut oats (equivalent to 1/2 c rolled oats) with 1/2 banana mashed in, and topped with some berries, and a sprinkling of coconut, @wheatmontanafarms chia, and @wholefoods hemp seeds. Very delicious! Accompanied by a steaming mug of @yogitea chai tea 😊
It’s amazing how much comfort you can get from one little pan of food... I first found the taktouka at @fernandezandwells two years ago when I was on my way to The Royal Marsden for my first appointment as a newly diagnosed stage IV patient. Fast forward two years, 30 infusions, and many, many pans of taktouka, and it still makes me feel as nourished and content as ever. (Especially on a grey, dreary day). Carrot and lentil soup 🥕
This time of the year I absolutely love soups. It's the perfect opportunity to throw in a whole load of ingredients to make a warming and satisfying lunch.
A large pot made over the weekend and frozen into portions makes a ready option to take out of the freezer for a nutrient rich dish.
I've used onions, garlic, carrots and celery as a base and threw in a couple of tablespoons of red split lentils. Warming herbs such as thyme and rosemary work really well.
