Many of the things I love have become bitter-sweet since losing my mom. Fall Equinox is one of those things, today was her birthday. 🍂🍁🌾
Being born on the first day of Autumn, my mom was very fond of this season. She was happiest wrapped in a blanket with a good book on a cool day. All the things that she loved about this season became things that I loved too: The changing leaves, pumpkins and gourds decorating the table, the sweet smell of cinnamon as banana bread bakes in preparation for the holidays. I still love these things, but now they are tainted with the bitterness of grief. I miss her so much, it still aches deep in my soul that she is gone. So much has changed... 💔
My life has been a whirlwind of challenges in the past few years, and I am only beginning to find enough peace and calm to truly mourn this loss. And in doing so, I am keeping my memories close. I have been carrying on the traditions she started in remembrance, but now it's time to start a new one. My mom's Birthday had become a painful day, one where I had been resentful of the life that had been robbed from her. Of the life that cancer took. But that's not what she would have wanted. If she can see me now, she would want to see me celebrating her life instead of being angry that she was taken from me. I need to make this right again. 😭
So today, I celebrate the Fall Equinox, and the day my beautiful mother came into this world. Last night, my family and I decorated the house for Fall in preparation, and baked banana bread. We will remember her today with love, and all the things that made her life special. I will play music that she loved, and read Irish folktales to my kids, like she did for me. 🍀🎼
The day I lost my mom, I did not know how I would carry on. PROTEIN BANANA BREAD (GRAIN-FREE)
1/2 cup vanilla protein powder
1/2 cup almond flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/3 cup melted coconut oil
1/4 cup honey
4 large eggs
1 tsp vanilla extract
1 cup mashed overripe banana
Mix first 5 dry ingredients and last 5 wet ingredients in separate bowls, then combine. Pour into a lightly greased loaf pan. Bake at 350 degrees for 30-35 min. Let cool, drizzle with cashew butter and let your taste buds be tantalized 😋

Super easy recipe for Banana bread with Greek yogurt👩🍳
1️⃣Preheat oven to 180 degrees. In a large bowl whisk together 190 g flour, 90 g sugar, 1 tsp baking powder, 1 tsp baking soda and 1/2 tsp salt.
2️⃣Combine 300 g mashed bananas, 210 g greek yogurt, 60 g melted butter, 1 egg and 1 1/2 vanilla extract.
3️⃣Add wet ingredients into flour mixture and combine. Fold in 70 g chopped pecans.
4️⃣Pour batter into loaf pan. Sprinkle 1 Tbsp brown sugar over batter. Bake for 1 hour until golden.
5️⃣Cool completely and serve🍰👌
