Meal Prep Monday!
Usually the weekend is spent highlighting meal prep but sometimes it just has to wait till Monday 😬
This week, we are trying some variations.
Normally I would brown meat the day we eat a meal but this week is so jammed pack, there really isn't time so we improvise by making meatballs.
3 dozen meatballs will be spilt for 2 meals.
Spaghetti with meatballs, with homemade sauce from last week that was frozen! (Matt and I will not have noodles just meatballs and sauce)
Beef Stroganoff, normally we'd use a roast for this but ground beef was on sale and, well, Mommas got a budget 😉
Both of these meals will now be a "throw and go":throw the ingredients in the crockpot and walk away.
Another HUGE staple in our house, Bone Broth.
Seriously, with an instant pot it takes 90 minutes. With a crockpot or on the stovetop it takes about 12 hours. Either way, 100% worth it. Keep it fresh and ready for months by freezing it.
Great for sipping, to add to a recipe, or making a soup. ❤

- Debido a que su pulpa posee un gran valor nutritivo es muy recomendado su consumo en las dietas vegetarianas.
- Es rico en ácido oleico (un tipo de ácido graso monoinsaturado). Este tipo de ácido graso ayuda a controlar de manera adecuada nuestros niveles de colesterol.
✅ La elección del pan es importante para hacer que el desayuno sea más fácilmente digerible, además de nutritivo. Es una buena opción utilizar panes que lleven harinas integrales, de grano completo y también semillas. Si puedes optar por uno hecho en casa o ecológico mucho mejor.

With every kind of candy and ice cream and treat? Pretty much... I get up every morning at 6 to start my day and hope that my babies stay asleep long enough to workout. I don't always want to do it, mainly because I take my lovely thyroid meds then do so because I have to to wait a WHOLE HOUR before stuffing my face with delicious breakfast foods 🙄😩. But, knowing I'm going to feel AMAZING after every workout, then getting to fuel my body with yummy, healthy food, mostly a veggie omelet or sometimes steel cut oats and honey, but mostly eggs... I mean... omelettes...and coffee... It's the best start to my day! Everyone has tough days, and everyone can find something to be grateful for.
I try to be grateful every day. Some days it’s as simple as being thankful the sun is shining.....there is always something to be grateful for. Today, I am grateful I had the day off to relax at home.

I apologize for not posting on the past weeks... it has been hectic. I've started a new job in Dubai and we've changed apartments. I still don't have the gas connected so I can't use my oven. Please bare with me on this transition. I promise as soon as I'm all settled in, I will be making new recipes and goodies. For now, please enjoy this amazing recipe!
The flavor reminds me of my childhood, a Mexican cookie I used to like.
M A C A • C I N N A M O N • A L M O N D • B U T T E R
2 cups almonds
1 1/2 tbsp cinnamon powder
1 1/2 tbsp maca powder
2 tbsp coconut sugar
2 tbsp coconut oil
2 tsp Himalayan salt . . .
Soak your almonds in water over night (8 hours) with 1 1/2 tsp of Himalayan salt.
Rinse almonds and spread on to a baking tray.
Dehydrate or bake at 60-80*C for 12 hours.
Blend away using a food processor or blender, remember to make breaks (if needed) to prevent your blender from overheating. Scrape down walls as you go and add 1/2 tsp Himalayan salt, keep blending. You will think that something went wrong because your mixture is too dry and looks like milled flaxseed... that is OK, keep blending. After a while you will start to see how its coming together but its still very dense... keep blending! When you reach to the desired texture, add the Maca, coconut sugar (adjust to taste), cinnamon & coconut oil and keep blending. Pour your freshly, creamy, cinnamony almond butter into a jar and store at room temperature for few days or in the fridge for longer.
