Dinner was delicious! Chicken thighs cooked in bacon grease on a bed of bacon cauliflower rice with a blanket of pepper jack, and of course Brussels sprouts because... veggies, and #yum !

I found this gem at the Newark Airport 🐂 i wish i could find this in Texas 😩 • STORY TIME: my flight was delayed 2.5 hours and i was pretty frustrated. I went to buy a snack and the scanner didn’t work. After fighting with the scanner with the attendant, i was ready to give up and said “i guess it’s just not my day to try this, it’s okay!” And she whispers to me “it’s okay just take it..” it felt wrong but she insisted so i got free EIGHT dollar beef jerky. • p.s. it tastes like pho!🍜🐂
I'm sick with a head cold today. Didn't think I'd be interested in eating but here I am. The broth will help a lot with my throat + stuffy nose and this chicken tikka masala from Costco (over cauli rice) will make my stomach happy 'cause it's a dang dream. It's so yummy and, as a convenient ready-made meal, it's been invaluable to me.
This is my sodium + potassium supplement. Beef broth (1,100mg in the half a cube that I use. I try to get ~5,000mg or so and the rest is easily done with the other foods I eat throughout the day). Still need to check my blood pressure to determine how much sodium I should consume. I kept my intake on the "low" side to be safe for now. For potassium, I add a tsp of LoSalt (another 680mg of sodium and 1,800mg of potassium. I try to get between 1,000-3,500mg of potassium a day). It's a super easy way to consume all this freaking salt... plus, it tastes like ramen. 👍🏼
Fasted all day - not on purpose but because I completely feel like crap today.
Last week Ben made some keto friendly broccoli cheddar soup and we have left overs that we froze! so I'm breaking my fast with that! It turned out delicious (next time we're going to try to make it a little thicker) • Hope you're all having an awesome day!
Made our first kimchi today! Very simple process and now we have enough for a few months. Lots of vitamins A, B, and C and an excellent source of probiotics to improve our gut flora. Oh and I forgot to mention the delicious taste!

#facetofacefriday and my 19 week #ketoversary ! 19 weeks...dang. Over 4 months of putting myself 1st (or at least closer to the top - I am a mom so let’s be real 🤗) and making better choices. A bit of real talk: October and November have been hard for me. The weather change, leaving summer behind, time change and the anniversary of the election made me all kinds of blah and sad and down and wanting to retreat and EAT. I stuck to #lowcarb but didn’t do my best. I didn’t really track or do anything above bare minimum. November 8th has come and gone and I actually feel a weight lifted with it being in the rear view mirror. Ready to be better and do better and try hard again.
