Mini Whole Wheat Greek Chicken Pizza and Salad
This pizza is light, yet filling. Eat two slices now and save the other two for lunch the next day. Or make for the whole family. So delicious!
Ingredients: * 2 100 % whole wheat Greek pitas
* 1 cup shredded chicken
* 1/2 cup low-fat mozzarella
* 1 cup cherry tomatoes, halved
* 1/2 cup green peppers, sliced * 1/2 cup red onion, sliced
* 1/4 cup black olives, sliced
* 1/3 cup feta cheese
* 1 tbsp oregano
* 1 tbsp basil
* 2 cups romaine
* 1/2 cucumber, chopped
* 1/3 cup sweet peppers, sliced
* 1 lemon
Recipe: - Place each pita on two separate pieces of aluminum foil - Drizzle EEVO on each one
- Then split ingredients and build your mini pizzas by layering mozzarella cheese, chicken, olives, green peppers, red onions, feta, tomatoes
- Sprinkle oregano and basil
- Cook in toaster oven for 14 mins at 375 degrees
- Place on plate and divided into 4 slices
- Add romaine, cucumbers and sweet peppers to the middle of plate - Squeeze lemon all over and drizzle EEVO
