Then you look into the spice cupboard for inspiration and think aah let’s try something new.
So I spotted the peri peri spice and decided to make a saucy peri peri chicken with roasted potatoes.
I kept it really simple and didn’t add cream to the sauce and it worked really well.
Peri Peri Chicken
1 chicken cut into pieces
1 tsp salt
3/4 tsp white pepper
3-4 tsp Robertson’s Peri Peri spice
Juice of 1 lemon
5 tblsp oil
Mix the marinade ingredients together and add chicken, mix well and marinate overnight or a few hours.
Put the chicken into a Pyrex dish and bake at 180 degrees Turing the chicken halfway through cooking.
Plate the chicken up and take the marinade from the dish and put it into a pot.Add a stick of butter and about 1/4 cup Nandos mild peri peri and 1/4 cup Nandos lemon & herb.Bring to a boil and pour over the chicken.
Garnish with parsley and serve with Portuguese rolls.
For the potatoes,
Lemon Butter Roast Potatoes
Peel and parboil baby potatoes.
Heat the oven to 180 degrees and place an oven tray into the oven to heat up.
Remove the potatoes from the stove, drain and let it cool for 2 minutes, squeeze over some lemon juice and toss well.Pour melted butter over, season with sea salt, black pepper & dried herbs.Toss well.
Remove the oven tray from the oven and place the potatoes.
Bake till potatoes are crispy turning every now and then.
So there I created a new recipe and the chicken was taken care of.

Wishing I was curled up in bed in Yorkshire with this bowl of blueberry and banana oats (topped with seeds, @meridianfoods crunchy PB and @lizisgranolaofficial original granola) but alas no I must hit those books 🍌📚
After a four and a half days of on and off migraines I finally managed to pull myself out of bed and into the gym this morning and feeling a little better for some stress busting (though @thestrongergirlblog is going to ruin me with this whole lifting malarkey she's teaching me) 🏋🏼♀️
I've had a manic couple of weeks hence my lacking online presence but I'm alive and term is drawing to a close so hopefully the blog will get some more love very soon 💛
