After being saved from near-starvation and the temptation to eat the entire contents of my fridge in one sitting following getting home far later than expected, I am now officially a ‘meal prep’ convert. I confess that I was initially sceptical and therefore am a little late to the meal prep party, but thanks to #mealprepmonday I had a deliciously nutritious grilled vegetable moussaka waiting to be microwaved and on the table within 10 minutes. .

Light, without compromising on flavour, it was very tasty too and went down a treat with a simple rocket and avocado salad. .
.
Grilled eggplant layered with zucchini, peppers, mushrooms, spinach and basil in a rich garlicky tomato sauce topped the lightest sprinkling of mozzarella and oven baked. .
.
Lesson learned. Being prepared, choosing wisely and remaining one step ahead of your hunger will get you one step closer to a healthier lifestyle......

It’s comforting to have something hot and of course taste good to just sip on all night. I asked myself do I want or need it? Paused and thought how would I feel if I did have it. It may seem boring, but my habit recently has been working in 30 minutes burst then taking a short break. And doing a mix of working sitting and standing for these 30 minutes bursts. It has made a huge difference to my focus.
