goodz👉 mix 2 tbs chia seeds + 1 tbs ground flax with 1/2 scoop @toneitupnutrition chocolate protein powder + 1 tbs @woodstockfoods almond butter + 3/4c or more almond milk. In the am add more milk if necessary and swirl in @kitehillfoods Greek style almond milk yogurt, almond butter, and top with blueberries, banana and @purely_elizabeth chocolate peanut butter & sea salt granola 🙌🏼🙌🏼

A closeup of last nights side dish 👉🏼Spicy Cauliflower Poppers 💥💥You can serve them with sauce or make an arrangement of dipping sauces on the side as a great appetizer (teriyaki, buffalo, spicy mayo)👌🏼
1 small head of cauliflower
1 egg, whisked
1 1/2 cups whole wheat panko crumbs
Cut up the cauliflower into florets, dip them in the egg and then in whole wheat panko crumbs. Place them on a lined tray and drizzle with olive oil. Bake on 350 for 35 min. Flip midway.
Sauce: 2 tbsp apricot jam or honey + 1/4 cup soy sauce + 2 tbsp spicy sesame oil + 1 tspn red pepper flakes + 1 tbsp sesame seeds + about 2 tbsp water. Stir together in a small bowl. Heat a skillet, place the cauliflower in and mix in the sauce until evenly coated, about 1-2 minutes.
Did a little extra prep last night to have some more veggie variety to add to my meals this week! These maple roasted sweet potatoes and brussel sprouts are one of my favorites- for meal prep or holiday parties 🙏🏼🙏🏼 So so simple to throw together. Recipe below ••
*feel free to double the recipe for a larger group
2 cups Brussels sprouts, halved
1 large sweet potato, thinly sliced
1/3 cup pecans
1 tbsp Avocado oil
1.5 tbsp Grass fed butter
1 tbsp Maple syrup
1/2 tsp Cinnamon
1. Preheat oven to 350. Line a baking sheet with parchment paper
2. Toss veggies in avocado oil and sea salt until evenly coated. Spread evenly on tray. Bake for 15 minutes.
3. Remove and stir veggies. Bake for another 10 minutes.
4. While baking, melt butter and mix with maple syrup and cinnamon.
5. Remove tray again and pour maple + butter mixture over the veggies. ** leave a tiny bit aside for the pecans. Stir and place back in oven for 5-10 minutes
6. Heat a skillet, then add pecans with remaining maple mixture. Let toast for about 3 minutes, stirring frequently so they don’t burn.
Now let’s just get this straight, these are no jersey bagels by ANY means buttttt, I did just try out @daveskillerbread cinnamon raisin bagels for the first time and they didn’t disappoint🙂

I got this blue-style ‘cheese’ from @sainsburys free from range & when I first had a nibble from the pack I thought it was rank, like mouldy coconuts 👎🏻but mixed with a crisp salad of little gem, plum tomatoes, red cabbage, olives & artichoke with a sharp cider vinegar dressing, it is really really good 👍🏻 I use to LOVE Stilton before going vegan (I ate half a wheel in 10 minutes at a festival one summer) so I’m glad I’ve found something which (kind of) provides an alternative 🧀

started my saturday with a sunrise salutation morning yoga session 🌤 felt so good to stretch + get the body movin! i came back and whipped up these PB&J PANCAKES but there is a twist - i added my two favorite things: zucchini & chocolate. plus this berry chia compote is to die for👇🏻
1/2 cup crunchy PB @kodiakcakes + shredded zucchini + 1 tbsp flax + 1 scoop @vitalproteins collagen + @enjoylifefoods chocolate chips! for the compote: mix 1/2 cup fresh berries with 1 tbsp maple syrup + 1 tbsp chia seeds in a pan over low heat. smash the berries, mix it up and let simmer for about 10 minutes. top + dig innnn🤸🏼♀️ #realfood#healthyeating#creatingvanilla#cleaneats
