My all time favorite Sweet Potato Casserole recipe from the 2007 Cooking Light Magazine. 186 calories per serving and delicious! 
2 1/2 lbs sweet potatoes, peeled and cubed
3/4 cup packed brown sugar
1/4 cup butter, softened
1  1/2 tsp salt
1/2 tsp vanilla extract
1/2 cup finely chopped pecans
Cooking spray
2 cups miniature marshmallows 
Preheat oven 375. Boil sweet potatoes in water 15 minutes until tender. Drain, cool. Place in large bowl. Add sugar and next 3 ingredients. Mash mixture together. Fold in 1/2 pecans. Scrape mixture into a 11x7 inch baking dish coated with cooking spray. Sprinkle with remaining 1/2 pecans. Top with marshmallows. 馃憠馃徏Poner unas 3-4 cucharadas soperas de copos de avena con leche(que cubra m谩s o menos los copos) en una cazuela, a帽adir pl谩tano troceado, ralladura de naranja(rallar la c谩scara de una naranja con un rallador, esto le da un toque muy 馃敐), d谩tiles cortados en trozos, canela y cacao puro, cocer a fuego lento y remover cont铆nuamente, cuando empiece a mezclarse todo bien y hervir a帽adir las claras de huevo para emulsionar mejor y dejar cociendo unos minutos mas sin parar de remover. Al servirlo le a帽ad铆 frutos secos y coco rallado por emcima. 馃А

Anyone feel like soup tonight? I made this West African peanut soup for dinner tonight 馃槏 I made this one with a mix of soy beans and cannelini beans for a nice protein punch. Since I have gone back to training I am getting so hungry again, I guess because my body is using more energy now it wants me to put more into it, and who's complaining about more food haha 馃檶 this is made with so much ginger, garlic and peanut butter, it tastes heavenly! Probably one of the best soups I have had to date I would say. 
I am really enjoying eating plant based, it's making me feel fantastic and energetic and I digest my meals much better than before now. Now I am off for a beach run!

Breakfast today is two poached eggs (free/protein), baked beans (free/protein), courgette (speed) sliced and fried with smoky paprika and @frylighthq and half a bag of spinach (speed) 馃崈 I used an egg poacher to make these eggs which is the BEES KNEES 馃悵 I'm really awful at poaching eggs and they end up all messy and scrambled so this is perfect 馃馃嵆 Yet another device to add to my already overflowing kitchen - apple slicers, blenders, spiralisers, soup makers, the list goes on... 馃檮 Does anyone else feel like they just HAVE to have alllll of the gadgets when on Slimming World?!

Vanilla flavoured creamer for coffee - made with soaked almonds and vanilla essence. Goes well with coffee.. and its so easy to make.

Almonds - 1/2 cup
Vanila essence - 1/2 tea spoon
Water - 1 cup
Method
Soak the almonds in water overnight. Drain them and put into a blender with one cup of water and vanilla. Blend for two minutes. Drain the milk in muslin clothes.  This should be sufficient for 2 - 3 cups of coffee. Store in an airtight container. Will last for 5-6 days in the refrigerator.

馃敻Coconut & mango slice馃敻
--
Ingredients:
.
Bottom layer: 
1 cup almond flour 
1/2 cup dates --
Top layer: 
1 cup desiccated coconut (or shredded coconut blend to a desiccated consistency) 
1/3 cup coconut flour 
1 TBS honey (or liquid sweetener of choice) 
录 milk of choice (I used unsweetened almond milk) 
1 TBS melted coconut oil 
2 mangoes + 陆 mango
----
Method: 
1. For the bottom layer, blend the dates and almond flour until they are well combined and start to clump. 
2. Press down into a medium sized tupperware container or slice/brownie pan 
3. For the top layer, blend 2 x mangoes into a puree 
4. Add to a medium sized bowl along with the rest of the top layer ingredients & mix quickly 
to combine. 
5. Add to top of the bottom layer and smooth over to evenly distribute. 
6. Thinly slice the remaining 陆 mango and add evenly to the top of the slice. 
7. Place in the fridge for approximately 1 hour to set.

Store in fridge
.
note: this slice can go soggy if kept in the fridge for too long, but it turns into more of a dessert than a slice + still tastes great.

Morango pra finalizar 
Raspa de um lim茫o 
Separe 2 gemas em recipiente e 3 claras em outro. Bata por 8 min as gemas com 1 colher de xylitol e a raspa de lim茫o. Depois bata as claras em 3 ovos
3 colheres de xylitol 
1 x铆cara de alguma fruta vermelha de sua prefer锚ncia 
Morango pra finalizar

3 eggs
3 tbsp xylitol or another sweetener
1 cup frozen berries
1 lemon zest 
Strawberries to finish

Separate 2 egg yolks in container and 3 egg whites in another. Beat the egg yolks with 1 tbsp xylitol and the lemon zest for 8 min. Then beat the egg whites stiff with 1 tbsp xylitol. Mix the egg yolks in the egg whites slowly. Preheat the oven 200 degrees. In a saucepan low heat place the fruit and 1 tablespoon xylitol. Cook until it turns into a thick syrup. Put the omelet in the oven for 15min. Then just fill with the syrup and finish with a strawberry.

Lamb Koftas and a Turkish dipping sauce for dinner.

The fellas at @twobutchers_ have got this combo nailed. Grilling these Koftas couldn't be easier, and the dipping sauce was as easy as 1 teaspoon of Saveur Turkish Mix in a Ramekin with some Greek Yoghurt as a base.
