This dish reminded me to make more herbed butters, especially for meat! Thyme, dill and cilantro herb butter on turkey breast with carrot ginger brown rice pilaf and sautéed broccoli and corn in a wok. Great meal that keeps you filled!!!

Day 002: I went to a show last night with my best friend from out of town and we didn't get back until almost 2am. Like most decisions made that late, we poorly chose to eat at Jack in the Box because I was too tired to cook and it was open. So, feeling a little bummed about that. Breakfast today isn't paleo either, but it's gluten free granola, almonds, blueberries and Greek yogurt.
Dinner 🍴 Tuna steaks with soy sauce, chilli, honey & coriander 🤤 Roasted vegetables from frozen (fuss free) 🥒🥕
I'll be honest I actually picked up a ready meal in Tesco (don't know why I never ever have them) I think it's because I'm so out of the routine for cooking for myself - just been eating out for the last week 🤣
BUT I put it down and I feel so much better for it. This literally got shoved in the oven like a ready meal would have anyway ✌🏼💃

Last minute lunch plans came up and a few of us from the training class went out for Indian food. The dish I wanted to get and could easily be tracked took too long to prepare so I had to make a split decision and picked this. Ate the chicken that was hidden under there and about half of the rice.
