Is it Friday yet?! For real.... so I got on the scale this morning for a midweek check - up 4.5 pounds from yesterday - hmmm... had a work lunch cancel and was stuck eating in our cafeteria (pizza day) - and then had an event after work tonight - tracked a Chic-Fil-A Chicken sandwich and went into my weeklies by 2 points. Went in to place my order and came out with 3 pts Grilled Nuggets - adjusted the tracker and under my dailies by 6 pts now. I will not let the numbers from the scale this morning or the crazy work week play a mental game on me and take me off course!!! #mentalgame

He paid for it later though!  @_darren_jones I am so proud of you.  This journey has not been easy at all and your dedication is untouched.  I'm accrual glad you compete because I've been dropping lbs eating what you eat.  I can't wait to see what we do with our bodies in 6 months before the next show. Couldn't even wait for the spaghetti squash to finish before I killed the sauce, but oh well. Tomorrow I have to do a way better job of eating more calories, because I only managed to eat 789 calories today :( I DO NOT CONDONE THIS. I truthfully believe the only way you lose weight in a healthy way is to EAT. It was a good start, tomorrow will be much better!

Makes it better that it's straight from our 8 week challenge meal plan! 
Have you sussed out what meals are in for week 2?

Ingredients
- 200g chicken breast, chopped
- 3/4 cup chickpeas, rinsed and drained
- 2 carrots, grated1 cucumber, chopped
- 1/3 cup avocado, chopped
- 1 tsp. coconut oil
- 1 tbsp. olive oil1 garlic clove, crushed

Method
1 - Heat coconut oil in a non-stick fry pan over medium temperature and cook the chicken with garlic for 7 minutes, turning occasionally
- In two separate bowls, evenly divide the chickpeas, carrot, avocado and cucumber, without mixing the ingredients together
- Add the cooked chicken to the bowls. Drizzle the olive oil over the chickpeas and season with Himalayan salt and pepper
- Serve one bowl and refrigerate the second bowl for tomorrows dinner

One more from yesterday. Switching back to an antagonistic split was a great idea. Choosing to do extended sets was even better  did some bent over barbell rows with 235 and went right into my pendlay power rows to failure. Also did some 3 finger and 4 finger pull ups after every set! 
Right now I feel in such great shape. Like, my energy levels in the gym are always sky high, I recover fast between sets, I do crazy intense 2+ hour gym sessions, most of my lifts are stronger than ever, I feel pretty athletic with all of my HIIT training, and I'm getting lean!

Two things: give your body what it needs when it needs it, and condition you body/heart/mind to be able to get through intense sessions in a breeze! I workout so long only because of how my workout and day is structured. I'm not saying everyone needs to do that. But you do need to push yourself and push your limits every time you step into the gym!

Anyways my rant is over. Resume your daily lives

If you like mashed potatoes ..................try this. I love it so hard. Recipe on a previous meal prep post: take a bag of cauliflower "pearls", aka chopped up cauliflower, and microwave it for 4 minutes (in the plastic bag it came in if you can, pierce bag with fork). Then blend in food processor with 1 T of olive oil (I only used about 2/3 the bag since I used the cauli for another recipe), salt, pepper, and garlic powder. Blend until whipped AC (as crap). Eat and be happy. Had this with a vegan Boca burger for protein, and romaine salad  with cherry tomatoes and apple cider vinegar. Seasoned the whole thing with Mrs Dash. Dessert was 2 pieces dove dark chocolate and 2 T chocolate PB2.

But seriously -- we were drowning in apples from recent apple picking adventure.  So, we tried a new dessert and the kids loved it (especially with a lil Halo Top Salted Caramel Ice Cream on top)!!! Check out this easy recipe 儭
_ BAKED APPLES

6 apples
6 tbsp honey
1 tbsp cinnamon
_

DIRECTIONS Preheat your oven to 180簞C.
Wash and remove apples.
Place the apples in a baking dish and then prick them with a fork (about 3 times).
Pour 1 tbsp of honey on each apple.
Sprinkle the cinnamon on each apples.
Pour a glass of water into the bottom of the dish.
Put in the oven for about 30 min.
Serve hot.

If you follow me on FB or instagram, you will know that I have been very open about my health and fitness journey over the last couple of years. I've always strived to post to motivate and uplift others who may relate to the struggles I had. But here's the thing....all the time people will tell me things like "I could never do that," or "You're superwoman," or things that make it seem like it's easy for me or that they couldn't do what I do. AND THAT IS TOTALLY NOT TRUE!!! .
Please don't look at my pictures or videos and think "I'll never be able to do that"... because I USED TO BE THAT GIRL. I used to stalk people who looked fit and think "I wish," or feel jealous, or start telling myself that they got lucky in life. But sooner or later I realized that instead of continuing that thought process, I could get up and DO SOMETHING ABOUT IT!!! 嘹'll keep it real, and I'm always honest about this, this journey has NOT been easy, and it's not over. It was not fun at first, especially. I LITERALLY CRIED during some workouts because I was so frustrated with myself.  But the amazing truth is, that feeling didn't last! I realized after dedicating a few minutes a day to work on myself and my health, I started to stop feeling unfit, sore, nauseated, and tired anymore. My body LOVED exercise, and it started to need it and CRAVE IT! So I kept going, and now I can't live without it. 返

So PLEASE, I'm very passionate about this, don't EVER believe that all these 'gym people' you see online got up one day and just LOVED working out. It doesn't work like that!! It IS hard to get started, but once you push through those first few weeks, it gets SO MUCH EASIER. Even if you have a small break, it doesn't matter, as long as you start again. Don't worry about getting started perfectly, JUST START! Your first few workouts you will probably have 100 questions and doubts running through your head, but ignore them and JUST KEEP GOING. You've got this. I'm here to help, and will continue to remind you with all that is in me that YOU ARE WORTH IT! 歹
