I can't tell you how many times I've forgotten to set a timer only to come back to a burnt mess 🙈! So These little NO bake PEANUT BUTTER | CHOCOLATE CHIP | PUMPKIN BALLS are my go to for an easy, portable dessert packed with protein and a hint of sweetness! They can easily substituted with any nut butter of choice! And if your going for uber healthy you can trade out the chips for raisins!
Just throw all the ingredients below in a bowl, mix that goodness together and then roll em up! 👉🏻 Refrigerate👉🏻and try to not eat the whole damn batch! Makes about 30 balls 👌🏼
3 cups rolled oats
1 cup natural peanut/ almond butter ( I used almond)
1 cups pumpkin purée
1 cup your choice of chopped nuts or unsweetened coconut flakes( I used coco flakes)
2/3 cup pure maple syrup or honey ( I used 🍁)
1 cups chopped nuts
1/2 tsp pumpkin spice
1/2 tsp cinnamon
1 tsp vanilla
1/2 cup mini chocolate chips ( I used ENJOY life dairy free chip- sooo yummy! )
1. Pumpkins are an antioxidant and an anti inflammatory food! This means it helps with joint health, organ health and stress relief.
2. Pumpkin is high in Vitamin A, which helps keep your eyes healthy and protects you from cataracts.
3. It's high in vitamin C, which helps the immune system and encourages collagen production for the skin to maintain its beautiful glow and elasticity.
4. Pumpkin is a great source of fiber, which help cleanse your system of toxins and keep keeps your GI system regular and healthy.
5. Pumpkins hold enough carotenoids to give them their lovely orange color and help prevent premature aging and cardiovascular disease.
6. Pumpkin seeds are high in plant based fatty acids, which help regulate cholesterol levels, protect against arthritis, promote healthy skin, and improve brain function

Friendsgiving leftovers will be eaten until…Thanksgiving. Today’s breakfast hack combines my brown butter bourbon pumpkin bread with my now-infamous cranberry sauce. I’d personally eat this every day if it was socially acceptable to eat holiday food year-round.

Thanksgiving is our absolute favorite holiday! Every year I look forward to and cherish these sweet moments with family. I also LOVE to decorate the table, because it'sthat one meal that you get to go ALL OUT with in decor. How about adding a modern twist to the classic orange pumpkin by painting it white? You can also buy naturally grown white pumpkins at local markets. They are available in several specialty breeds including Lumina, Cotton Candy, Full Moon, Polar Bear or miniature Baby Boo. White pumpkins taste essentially the same as their orange counterparts, the only difference really is their skin! Fun Fact: There are also pumpkins grown naturally red and blue!⠀
No matter how you choose to decorate your table year the important part is inviting gratitude. So often we go through our days without carrying a grateful heart. To me, these days leading up to thanksgiving are a great time to refocus and shift our perspective towards gratitude.
This meal was delicious!! I love a good pumpkin dish, but I have been very leary of the pumpkin pasta sauces. It just doesn't sound appealing. A friend showed me this recipe and it actually sounded like it could be good ... or really gross. Well, it was a huge success! It doesn't have very much pumpkin flavor at all, it just makes the dish really creamy. Usually leftover mac and cheese is dried out and not too great. This is even great with leftovers! Highly recommended! I will probably add extra veggies next time, aside from that, it's perfect! #skinnytaste
