Stuffed peppers for supper!
I stuffed them with a blend of white rice and a vegetarian taco mix, and some red and green onions 👍 I had some salsa and one lonely slice of Field Roast Chao left in my fridge to add to them 😘
Allergen-free stuffed peppers (stuffed with quinoa, black beans, cilantro, ground chicken, chicken broth, tomato sauce, garlic, & onions) and a nice big avocado, tomato, and romaine salad with a cilantro dressing. Recipe of the week: Ground turkey stuffed bell peppers!
This recipe is a great way to get in lots of protein as well as those important micronutrients!! -3 large bell peppers
-1/2 package 99%lean ground turkey
-1 cup brown rice
-1 clove garlic
-1 tbsp olive oil
-1/2 small onion
-salt (used sparingly)
-1/4 cup sharp cheddar cheese
Cut stem and seeds out of peppers and wash thoroughly. Place in deep sauce pan and boil in about 1 inch of water for 5 minutes. Once done place upside down on paper towel to dry. Begin to sauté onion and garlic with olive oil. After they become tender add in the turkey. Sauté until turkey is thoroughly cooked and then throw in the tomatoes. Once done add in rice and the cheddar cheese (save some for the top at the end). Stuff the peppers until full and place in baking dish in a 350 degree oven for 25 minutes.
