Steve and I whipped up these bean tacos with corn salsa for dinner tonight, they were sooo yummy! We were kicking ourselves when we realised we forgot to buy avocado for guacamole but 😧
This is one of our favourite meals to make - it’s really cheap, fast and easy and is so refreshing on hot summer days 👌🏼☀️
Serves about 4 🌮 LETTUCE TACOS ⬇️
1 Iceberg lettuce
450g brown rice (we used a steam packet)
1 can black beans
1 can kidney beans
1 can chopped tomatoes
1 brown onion, diced
2 garlic cloves, crushed
2 small chillies, sliced or diced
3 large corn cobs
1/2 red onion, diced
Handful of cherry tomatoes, diced
Handful of coriander
Juice of 1/2 lemon
Brown the onion in a large fry pan with olive oil. Add the garlic and paprika and cook for a further 2 minutes. Drain and rinse the beans then add to the pan. Add the rice and can of chopped tomatoes. Stir through chopped chillies and if you want more flavour stir through half a jar of salsa.
Cook corn then slice off kernels. Place in a bowl with red onion, coriander, cherry tomatoes and lemon juice.
Carefully separate lettuce leaves, using them as the tacos, layering them with the rice mixture, corn salsa and jalapeños. We crunched up some corn chips to put on top too 🤫😋
Also, top with guacamole if you don’t forget it like us 🙈
