Blueberry and Chocolate 🍫 coyo tarts, with Almond Brazil crust. The worlds easiest raw dessert recipe made by the lovely @panaceas_pantry ❤️
1/2 cup almond meal
1/4 cup Brazil nuts
2 Tbsp raw cacao powder
1.5 Tbsp coconut oil
10-12 Medjool dates, pitted
Cacao flavoured coconut yoghurt (I used Coyo, or see below)
1. Add almond meal, Brazil nuts and cacao to a high-speed food processor and pulse until Brazil nuts are a fine crumb.
2. Add coco oil and dates in, and again pulse until a sticky dough ball forms- add more dates if necessary.
3. Divide dough into 3 even balls, and press into 3 small flan tins. Take care you get the dough nice and even all over.
4. Spoon in the cacao coco yoghurt, and top with blueberries! .
If you can't find cacao-coconut yoghurt, make some! But plain coconut yogurt, add 1 cup to a mini food blender with 1 tsp raw cacao and 1 tsp pure vanilla extract. Blend until even, then taste- Add more cacao/vanilla if you like, or some maple syrup if you like it sweeter.
