Such a delicious lunch mix today - sautéed spinach and quinoa in avocado oil, crispy Brussels, pomegranates and pumpkin seeds. Toddler is usually a fan of quinoa so I try to add in different veggies to see what she might go for. I’m usually munching away on the same thing that’s in front of her so I think that helps encourage a bite which sometimes is just that. It’s all about consistent exposure.
On another note, if brussel sprouts hurt your stomach try steaming them for 10 minutes then roasting them on high in avocado oil (plus whatever seasoning you want). It really helps digestion plus gets them soft in the middle with a crispy outside - so good!

So excited that my new plate has arrived. Half veggies and only a quarter carbs (there are plenty more carbs in with the veg don’t worry!)
For so long, dietary advice has been to avoid fats and base meals on carbs, but science has proven that that was wrong. White pasta and bread might not be the best choices in carbs, but I for one can forgive that for this amazing visual of how we should all be structuring our meals. And I love the variety of colours and size of the fish too!

Colourful hot and spicy stir fry veg with Linda McCartney Hoi Sin duck 😊 Got the pack of stirfry in the reduced section..I usually just use frozen so it was a nice change. Added a bit of 5 spice and some garlic granules while stir frying and a splash of soya sauce at the end. I decided to not use any spray oil in the pan just a splash of water and it made no difference whatsoever. I didn't finish all this so leftovers for tomorrow 😊💚
Krem marchewkowo-porowy (carrot&leek soup) 🍲🥕
Na dnie garnka smażę dużą cebulę pokrojoną w kostkę, na 1 łyżce oleju, po chwili wrzucam przeciśnięty przez praskę czosnek, dwie duże marchewki i korzeń pietruszki pokrojone w plastry, duży por z odciętą najciemniejszą częścią pokrojony w cienkie plastry. Dodaję: liść laurowy, ziele angielskie, pieprz w kulkach, lubczyk, majeranek, estragon, cząber, zioła prowansalskie, świeżą bazylię i kozieradkę. Zalewam 2l wody, wsypuję płaską łyżkę soli, gotuję bez przykrycia. Na patelni tworzę zasmażkę z oliwy i powoli dosypywanej mąki, dodaję do zupy.
Grzanki tradycyjnie w zalewie z oliwy, soli i czosnku.
