2 C chopped fresh spinach
1/2 C chopped onion
1/2 C GF Italian bread crumbs
2 eggs
1 Tbsp garlic
1 tsp salt
1/2 tsp black pepper

Combine ingredient well. 
Roll into balls
Bake at 400 degrees for 25 minutes. 
ENJOY!!!!!!! We served with a side of zoodles and Green Thia Coconut Milk Curry. 😋

Ginger scones (best scones ever!!) made by my beautiful mother for morning tea.

Recipe (well, kind of): SR flour, ginger beer, pure cream & ginger pieces. I asked Mum for quantities and it seems the ‘make it up as you go along’ gene runs deep. She  had no idea 😂
To get you started, work on 4 cups SR flour, about 350ml ginger beer, about 300 ml pure cream & a handful of roughly chopped ginger pieces. The key is not to overwork the dough before baking. Bake on 220’C “until they smell cooked” -mum’s words not mine 😂. I think about 10 mins.
Served with ginger marmalade and butter. .

Threw (placed) some shredded broccoli, carrot & cabbage from @traderjoeslist in a bowl with diced bosc pear and walnuts and tossed it in a dope tahini dressing. Recipe as follows:
5 tbsp tahini, 1.5 tbsp maple syrup, 4 tbsp warm water, 1 tbsp apple cider vinegar (or lemon juice), sea salt & pepper (to taste) & 1 tbsp sesame seeds (optional: a dash of turmeric/cumin) whisked together and combine with salad.

Makes an awesome side to any meal. Or top it with some baked tempeh, tofu or beans for a satisfying main. Now get out of here and shred that gnar -ly cabbage

Finally finished 👍 Tri color rotini with chicken and tomatoes. I used cornstarch to thicken the excess chicken/tomato juices to add some sauce to the dish and paired it with green beans. Btw the chicken is YUM.

Sweet potatoes, baked for 5 minutes in the microwave and scooped out as vessels. Everything thrown on a pan in the oven, drizzled with olive oil, topped with the seasoning, add chicken, bake around 30 minutes. Voila...
